Oatmeal Chocolate Chip Cookie Dough Energy Bites




Hey Friend,


After I posted this picture on my story yesterday, I got SO many requests for this recipe!


It is actually from a post a few months ago, but I figured it would be easier to keep my favourite recipes on my blog so you can find them easier!



 

I'm not going to say these taste exactly like oatmeal chocolate chip cookie dough, BUT.....⁣

These suckers taste EERILY SIMILAR to oatmeal chocolate chip cookie dough. ⁣


Ingredients:⁣

  • 1C dates ⁣

  • 1 (large) C raw cashews ⁣

  • 3/4C oats⁣

  • 1 tbsp coconut oil⁣

  • 1 tsp salt⁣

  • 1 tsp baking soda (for the "dough taste)⁣

  • 1 tbsp vanilla protein powder⁣ (this doesn't add a lot of protein but gives them an awesome cookie flavour! OR substitute with a few drops of Vanilla Extract)


Steps:

  1. Add dates to the blender first and blend until they are in little pieces. Trust me, this is much easier on your blender and will help the dough form better.

  2. Add all remaining ingredients to the blender.

  3. Pulse the blender until the ingredients come together like a dough. This may take a few minutes for the dates (which are sticky) to mix with all the dry stuff. Scrape down the sides of the blender to make sure it mixes fully.

  4. Mix in chocolate chips to taste (this is key)

  5. Roll them! Go one scoop at a time and press as you roll so the ingredients stick together. If it is too sticky or too dry, add in extra oats or a few drops of water to fix the texture. I usually get around 12-13 per batch, but you can make them as large or small as you want.



Store: in the fridge for up to 1 week (if they last that long) OR freeze them for later!


(If I was more on my game, I would make a bunch of different batches and then keep a few of each flavour in the fridge. Then, each day I would get a surprise. Maybe one day I will get there...)

Notes:

  • Blender: At school, I have a Ninja blender, and at my parents house I use a Blendtec. Honestly, they both work well. If you don't have a super high quality/power blender, make sure you "pulse" the dough so you don't overheat the motor. If it smells like burning plastic, let your blender cool down for a few minutes before continuing.

  • Rolling: this is a labour-intense process, but so worth the ball-shape. It feels like you're eating healthy Timbits!



 

I can't wait for you to try these! In case you didn't already know, I'm addicted to energy bites. They are - hands down - my favourite snack. They are just sweet enough and so fun to eat that they feel like a treat, but are still really good for you!
